Asian Salmon and Rice
Cooking on a college budget let alone being able to cook in college is sometimes one of the biggest transitions of a college student’s life. Suddenly there is no more mom and dad to cook for you and sometimes the cafeteria has too much mystery meat and canned vegetables for you. But never fear, cooking is easy and you can make a hearty, healthy, delicious meal with only ten dollars in your pocket and a trip to the local grocery store. Today’s recipe is Asian Salmon and Rice.
Ingredients
1 Salmon Filet
1 Package of Uncle Bens Fried Rice
Teriyaki Sauce
Soy Sauce
Garlic Powder
Instructions
1. Thaw out the Salmon.
If you are like Poormann, most of the time, as college students, this step is forgotten or left until the last moment. To remedy this, just simply place the salmon filet on a plate and put into the microwave until thawed. Most of the time salmon comes in a little plastic package, if you want to take it out that’s fine, but if you don’t just be sure to not forget it or else the package might melt around it.
2. Teriyaki Sauce and the Salmon
There are two options for this step depending on if you had thawed and depending if you want to take the time. To “baste” the salmon simply put the thawed salmon in a zip-lock bag with enough teriyaki sauce to cover it about half way when laying flat. After that, let it sit for about half an hour.
3. Cook the Salmon
Now if we have the salmon basted we can simply put it in a pan with a dollop of cooking oil and let it go. For this option, simply make sure to turn the salmon over occasionally so it does not burn itself to the pan (this is much more apt to happen if there is skin still left on the sateriyaki as the salmon cooks, but be careful though it can splash around and getting hot teriyaki on ones arms hurts in the long run. Throughout cooking, for both paths, occasionally toss a dash of garlic powder on the salmon. For both options, cook until entire filet is a light pink color.
4. Cook the Rice
Alright, so there is no escaping it. We are going to go the cheapest and most time efficient way around the rice predicament. Even though rice is very simple to cook, it saves time and effort to go out and get a premade batch of Uncle Ben’s Fried Rice. Any other type of premade rice is fine depending on your preference. Cook the rice according to instruction on the package and then put on a plate. Add a little drop of soy sauce to make the rice less sticky.
5. Serve
Now simply put the rice into a little mound in the middle of the plate and add the salmon on top. Add any garnish you have and enjoy.
